| Oven-Roasted Turkey Meatballs With Spaghetti |
| Ingredients: 2 slices firm wheat bread, coarsely chopped 1 small zucchini, shredded 1 large egg white 1/3 cup grated Romano or Parmesan cheese 1 garlic clove, crushed 1 TSP salt ¼ TSP ground black pepper 1-pound lean ground turkey breast 1 package whole-wheat spaghetti 1 jar pasta sauce - 26oz. Preheat oven to 450 degrees. In large bowl, with hand, mix bread, zucchini, egg white, Romano, garlic, salt and pepper until evenly moist. Add ground turkey and mix just until evenly combined. With wet hands, shape turkey mixture into twelve 2" meatballs. Place meatballs in jellyroll pan and bake 18-20 minutes or until cooked through and lightly browned. Cook pasta as directed on package. While pasta is cooking in a 2 quart saucepan, heat sauce over medium-low heat until simmering, stirring occasionally. Drain pasta and sprinkle with parsley. Total time 40 minutes - serves 6.
