| Hawaiin Honey-Mustard Chicken |
| Ingredients: 1 large can sliced pineapple, packed in its own juice, not a syrup - substitute fresh pineapple when available. 4 boneless & skinless chicken breasts - salt & pepper to taste 2 large cloves garlic 1 TSP thyme 2 TSP olive oil 1 TBS cornstarch ¼ cup honey ¼ cup Dijon mustard Drain the pineapple juice; reserving the juice. Sprinkle the chicken with salt/pepper, then rub the meat with garlic & thyme. Heat the oil in a skillet until hot; cook the chicken in the hot oil until brown. Combine the pineapple juice with the cornstarch. Mix the honey & mustard together, then stir into skillet & simmer for 15 minutes. Stir the cornstarch mixture into pan. Add the pineapple slices. Cook, stirring until the sauce thickens. |
