| Chinese Chicken Salad |
| Ingredients: 1 can dried chow mein noodles or 2 ounces rice sticks and 2 TBS sesame oil to fry them 1 roasted chicken, skinned, meat shredded into thin slices 4 stalks green onion, cut into ½" slivers 1 bunch cilantro, stemmed and chopped 1 large head of lettuce, shredded 3 TBS sesame seeds, roasted Seasonings: 2 TSP low sodium soy sauce 1 TBS sesame oil 1 TSP salt 3 TBS salad oil ½ TSP pepper Juice of ½ lemon 2 TSP sugar If using the rice sticks instead of dried noodles, fry the sticks in oil heated to 350 degrees until they puff up - it takes no more than 1 or 2 seconds; remove and drain. Combine all the ingredients except the noodles or rice sticks in a large bowl and toss together. Add the noodles or rice sticks at the end. Serve immediately, or refrigerate packed in an airtight plastic container. |
